Hello Boys and Girls. Ha! I was just practicing for all of you here in the states who are busily getting your children ready to go back to school in the next few weeks. I do miss those frantic days.

Last weekend MeMum and I made some Raspberry-Cherry Freezer Jam.  When the boys were little, I planted some raspberry bushes at our then-house and that’s when I first started making this jam.  It’s from an old recipe that’s quick and easy — if you’ve never made jam, this is a great place to start.  We made two batches of 8 jars each in just under 2 hours.  It’s reeeeaallllly good if you like raspberries and cherries.

Raspberry-Cherry Freezer Jam

3 cups raspberries
16-oz. can sweet cherries, drained (reserve liquid)
1/2 cup corn syrup
1 tablespoon lemon juice
5 cups sugar
Reserved liquid plus water to make 3/4 cup
1 3/4 oz. pkg. powdered fruit pectin

Fully crush raspberries; measure 2 cups. Finely chop sweet cherries; measure 1 cup.  In 4-quart bowl, combine raspberries, cherries, corn syrup, lemon juice and sugar; mix well. Let stand 10 minutes.

In small saucepan, combine liquid and powdered pectin. Heat to full rolling boil, stirring constantly; boil 1 minute. Pour hot pectin mixture into fruit mixture; stir vigorously 3 minutes. Ladle jam into clean jelly glasses or moisture-vaporproof freezer containers leaving 1/2 inch headspace. Cover with tight-fitting lids; label. Let stand for several hours at room temperature or until set. Store jam in refrigerator up to 3 weeks or in freezer up to 3 months. Makes 8 cups.   (Free jam labels here.)

I love this stuff. I think I’ll use it in that Raspberry Almond Bar recipe — Yum oh Yummy Yum.

  1. Yum! I love the smell of cooking jam in the house. There is nothing quite like it. So comforting! And thanks for reminding me of the Almond Raspberry Bars recipe. I’m going to make a batch this weekend.

    Looks wonderful Anna. I’ve never combined raspberries and cherries, I’ll have to try that some time.
    And Mrs. John DeGroot is also very excited about this (from her grave of course) since you’ll once again be honoring her by making her almond bars.

  3. MMMM…I think I need a piece of toast. Right now. Is it wrong to eat toast this close to midnight? I don’t have any cherry-raspberry (chasberry??) jam, but I do have a jar of strawberry in the freezer. I love it on toast when it is frozen. I wonder if the smell of toast will wake up Mr. Handsome. And if it does is that amusing or annoying. We shall see…

    The recipe sounds delicious! The pictures make me want to dip my finger into the jam…
    I LOVE to make jam. The only problem is, that I rarely eat it…so I have many, many glasses of jam to give ;o).
    As we don’t have a garden, we sometimes pick fruits outside the city (there are many farms that offer this service/opportunity) – two weeks ago it was blueberries…today I’m going to bake some muffins with those I freezed.

    And yes, school is just around the corner. I’m not frantic yet but my daughter has been getting up {on her own} each morning and practicing “getting ready” for school. She is definitely my daughter LOL!

  10. She beat me alright! But there’s no need to call the authorities…..I’m just moving S_L_O_W in this open air sauna that is Florida this summer!
    Our resident wanna-be farmer despaired of me making jam from his recent crop of golden honey figs—so he made it himself, and it was/is delicious. He always wants to spice things up, so he added a little cayenne. And, for a change, it was a moderate amount, so it didn’t blow my head off when I spread it on some toast!
    Your raspberry/cherry jam sounds tempting. I’m sure those flavors taste yum together.
    My sister, who lives where I would like to be right now, makes blackcurrent jam every year, since her in-laws have loads of bushes, laden with fruit, that goes to waste if she doesn’t use it because The Queen’s jam-making days are long gone. And if you’ve never had my sister’s blackcurrent jam, then you haven’t fully lived!
    Ha, I could have just made a blog post out of this—-but, moving_too_slow to bother….I’d rather steal space on yours!

  12. Hi Anna…..that’s some good-lookin’ jam, I tell ya. I was a little prejudiced when it came to making jam….only the cooked kind for me. Then last year my daughter wanted to try freezer jam and I think I’m hooked. A lot less sugar and the color is so vivid. She tried peach and strawberry, both so delicious. I’ll pass along your raspberry/cherry recipe to her…have a sweet weekend!

    we’ve got to stop meeting like this!
    figs? figs you say? now, there you go teasing me.. i’m a girl who loves figs. fig jam, fig chutney, fig tarts, grilled figs stuffed with feta and wrapped in prosciutto, figs in vanilla syrup over ice cream, figs drizzled in honey… oh man, the second crop hasn’t come in yet and boy am i a girl with a plan!
    that’s wonderful that your sister makes black currant jam. we don’t have currants growing here that i’m aware of.
    do a fig and currant post for us early in the morning, before it gets hot!

    NEXT few weeks? DD16 went back to Grissom this past Monday! :) And, since we have finally set her free to drive on her own, we don’t have to drive her to school!!! I feel SO liberated – HOORAY!!!
