I Scream, You Scream…

Wait! Before we talk about Ice Cream — I’ve been terribly remiss in my Aurifil Block of the Month duties. Miss June is none other that Pam Kitty Morning! I’m so sorry it’s taken me so long to mention your adorable block PKM — in my defense, I’ve been a little distracted with daughter duties this month. BUT — I LOVE the June block — How cute is this???

I think PKM might be putting this cute basket on a little hand towel — and now I have a hand towel on my to-do list.  I love all the vintage-y goodness about this cute little basket of flowers.  Very Fun!

Now, back to ice cream.  Is is hot where you are?  It’s been pretty steamy (and DRY — send RAIN!) here in the middle parts of the US.  Perfect for some ice cream pie.  This is an old family favorite that we put into our family cookbook a few years ago.  

Ice Cream Pie

MyDadLovesMeBestSister used to request this pie in lieu of birthday cake every year.  I love it for the nut crust which is awesome.  And the sauce.  I know lots of people don’t like raisins, and they can easily be left out of this recipe.  I LOVE raisins though, so they stay in for me.  This piece of ice cream pie is looking all melty, but it’s still good.  You have to eat it pretty quickly in this heat if you don’t want a big yummy puddle.

Ice Cream Pie

Ice Cream Pie

1 egg white
1 1/2 cups chopped pecans
1/4 teaspoon salt
1/4 cup sugar
1/2 teaspoon vanilla
1 pt. coffee ice cream (I hate coffee anything, so I substitute Maple Pecan Ice Cream)
1 pt. vanilla ice cream
Raisin Sauce

Beat egg white until frothy. Add salt, then sugar gradually, beating until egg white is stiff. Fold in vanilla and pecans. Spread meringue in greased 9-inch pie pan, building up sides to form a shell. Bake at 325 degrees, 12-15 minutes. Cool.
Spread slightly sofened coffee ice cream in shell, then vanilla ice cream. Freeze. Remove from freezer 20 minutes before serving time. Serve with warm raisin sauce.

Raisin Sauce

3 tablespoons butter
1 cup brown sugar, packed
3/4 cup whipping cream
1/2 cup raisins
1 teaspoon vanilla
1/8 teaspoon salt
Heat butter in saucepan until bubbly, then add sugar and cream, stirring until well blended. Add raisins, vanilla and salt and slowly bring sauce to a boil. Cook about 5 minutes. Cool. Spoon sauce over each pie serving.

Enjoy! It’s a fun, decadent treat for a hot summer day!

  1. I could use some of this. 97 today and water rationing on the gardens already. And we have a 50,000 acre fire burning 10 miles north. I can see the flames from my bedroom window. Send ice cream….and rain, without the lightening.

  5. I’m definitely trying this recipe, Anna. I’ve never heard of one like it….the in-laws love sweets so for our 4th of July party they’re in for a treat! Hope all is well on your end….love the embroidery too :)

  6. Love the block and the colors! We’ve been eating our fair share of ice cream in these parts too. I’ve been crocheting – sometimes it’s nice to see a project work up quickly and it’s easy to fix a mistake if you have to. Of course, that never happens to me. ;)

  7. Oh, yum! It IS hot here, and I am definitely going to try this recipe. It looks delicious. And I am a big fan of raisins, so they will stay for me, too. PKM’s block is just oozing cute. The little birdie clothespins make it all the more perfect.

  8. Ooooh I think Coffee keeps me alive some days…..we have had the heat, but insane humidity with it….we FINALLY got some rain and it is nice and sunny/windy today…..

  10. Brrrr! Too cold for us down under! We could have left the icecream outside and it not melted last week. The end of this week could be the same. You can have some of our rain. Enjoy your icecream!

    Your ice cream pie brought back memories of Baskin Robinns mud pie with coffee ice cream. Yum!

    the ice cream pie looks wonderful.
    i like raisins but i don’t know if they *work* for me in this.. and i think the *raisin sauce* is missing some R.U.M., but what do i know?
    i’m going to make it this summer.

    While strolling through the internet today, I came across one of your posts from February 2008. You see, I have recently come into a huge lot of vintage postcards, all kinds, and I’ve been thinking about what to do with them. I had in mind that sometime back I had seen crochet done around cards or paper or whatever, and lo and behold, while searching I found YOU! I should have known. I don’t suppose you any other ideas for these things?

    I couldn’t comment on your last two posts, because comments are now closed. But I love that top! So awesome. I am so bad about sewing clothes.

    And that little pinwheel fabric is so great. I just got a thread catcher from Amanda Jean in that fabric and I adore it! I always sew up those little triangles into half-square triangles and make pinwheels out of them. Or I just save them all sewn up and figure I’ll do something with them “someday.” LOL.

    Love your garden. Sure wish I could do that. Black thumb here.
