Broccoli Salad

Thanks for all the Grandma-Shirt Love.  You guys are all so sweet!  I wore that shirt all day on Saturday and it sure is comfortable.  I just try not to look in the mirror!  ;-)  I don’t have much else to report this week.  My boss came in to my office at noon today and asked if I could make a quick trip to NJ for a meeting tomorrow, so I’m leaving in 15 minutes to go hop on an airplane.  I thought my NJ trips were over for awhile, but I guess not.  No time to plan a quickie visit into NYC this time {sigh}.

In the meantime, how about a quick summer recipe for broccoli salad?  You probably have a favorite recipe of your own, but just in case, here’s one that I like:

Broccoli Salad

Broccoli Salad

Salad:
2 bunches of broccoli
10 slices bacon (cooked and crumbled)
2/3 cup raisins
1/4 – 1/3 cup purple onion, chopped

Dressing:
1 cup mayonnaise
1/2 cup sugar
2 T. red wine vinegar

1. Wash and cut broccoli into bite-sized pieces.
2. Combine broccoli, bacon, raisins, and onion in a large bowl.
3. In a separate bowl, mix mayonnaise, sugar, and vinegar. Pour over salad and toss.
4. Refrigerate at least 2 hours before serving, tossing occasionally.

Broccoli Salad

Easy Peasy. This makes a great salad to take to a 4th of July cookout!

  3. I make something similar, expect I throw in grated cheddar cheese. Deeeelicious! Love the idea of adding raisins and sunflower seeds.

    To make it really super quick and easy, I use a jar of real bacon bits, found near the salad fixin’s in the grocery store, instead of cooking bacon myself. I also use the pre-grated cheese, and a bunch of scallions instead of the purple onion.

    It’s one of our favorite side dishes in the summer!

  9. I have this one on my recipe blog! I also add a cup of sunflower seeds —makes it deliciously crunchy! You can also add sliced mushrooms….and grated carrot, as another commenter said. I could polish this off all by myself!

  14. I made a broccoli salad Saturday – similar to yours except you use buttermilk ranch dressing and it also had mango, nectarines and cashews in it. Very yummy!

  17. The salad looks delicious. I make one similar but use red grapes halved instead of the raisins and it has shredded sharp cheddar cheese. I love summer salads.

    i’m sure i could think of something if it weren’t crack o’ dawn…
    hope your trip is going well. i’m sorry that you won’t be downing any magnolia cupcakes from NYC. i’m going to go to the bakery when i grow up. unless of course, i’ve opened my OWN cupcake bakery, just down the street, and mine has put theirs entirely out of business… and i’m sitting in the back office, eating cupcakes from MY bakery instead of theirs, while they wait in line at my bakery, secretly wondering why MY cupcakes taste so much better than theirs…….

  41. I love broccoli salad and this sounds so good Anna. Have you ever tried that ramen noodle salad that has broccoli slaw and raisins in it? I’ve been craving that lately but this sounds a whole lot better for me. Maybe I’ll have to do both. And egg salad sandwiches. I’ve been craving that too!
