Christmas Shortbread
1/4 cup sugar
1/2 cup butter
1/4 teaspoon vanilla extract
1 1/4 cup flour
Pinch of salt
Chocolate Glaze:
1/2 cup semi-sweet or white chocolate chips
1 teaspoon shortening
Cream together butter and sugar until just combined. Add vanilla. Then add flour and salt to mixture and mix until
dough starts to come together. Wrap in plastic wrap and chill for 30 minutes.
Roll dough out to 1/2 inch thickness on a floured surface. Cut into desired shapes. Place on ungreased baking sheet and bake
at 350 degrees for 20 to 25 minutes or until edges start to brown slightly.
For chocolate glaze, melt shortening and chocolate chips together in the top of a double boiler or microwave. Stir until all chips are dissolved,
then dip edges of cooled cookies into chocolate. Sprinkle with colored sugar or sprinkles, as desired. Cool on cooling rack until
chocolate is set.
