Brown Rice Pilaf
1/4 cup butter or margarine
1 clove garlic, crushed
1 cup chopped onions
1 cup brown rice
2 cups boiling broth or consomme
Salt and Pepper
1/3 cup chopped parsley or green onions
2 – 4 tablespoons diced red or green pepper
Melt butter in a large skillet over medium heat. Saute garlic and onions until tender. Add rice and saute 3 – 4 minutes. Turn into greased, shallow 2 1/2 quart casserole dish. Add boiling broth and season to taste with salt and pepper. Stir well. Cover and bake at 350 degrees for 1 to 1 1/4 hours or until rice is tender.
Stir in parsley and green pepper. Fluff mixture with a fork. Makes 4 to 6 servings.

i thought i’d let you know that we have been experiencing terenchal rain for the past 4 days straight!!! cold, rainy, thunderstorms, hail, flooding, and even a tornado warning!!! go figure! i didn’t want you to be wishing you were in sunny ca. it’s not so sunny! But Brigette, it IS a casserole, isn’t it? “Turn into a greased, shallow 2 1/2 qt. casserole….” and “bake for 1 1/4 hrs.” Sounds like a casserole to me. One I’ll have to try!
I planned to make something very similar last night, with some salmon thrown in at the last minute, but then realised we had no brown rice. Bother. I do love brown rice!

I’ve never made anything but minute rice. I guess I should try baking it! I can’t wait for February. Or better yet, March!
I love rice dishes and look forward to trying this one out. I must go to the grocery store to get a few things. I can relate to the cold cold weather. We’ve been pretty cold here and the snow keeps falling. I had to make two attempts at our hill leading out of our neighborhood. Crazy.

oh, we are *so* working up to a ‘thimbleanna’ cookbook. ‘clementine’ can assist, though she only does lazy stuff like turning frozen bread dough into sticky buns!

I think that this will be a winner with the family – we love rice dishes and are looking for some healthy food. Have just returned from a two week vacation with no home cooked food!
But I don’t like brown rice. I wonder how it would be with white rice and chicken stock…

I need a good rice recipe. My family likes rice but I am not happy with how I currently make it. This makes me want to make rice with a good side of veggies and grilled chicken!
hey it is cloudy here today and at the moment 26C with a lovely cool breeze – supposed to go to 33degC which is such a nice change from the 37+’s we have been having daily……..
